With Chinese New Year around the corner, we decided to recreate Lim Chee Guan’s famous Sliced Pork Bak Kwa!

Full Recipe:
Ingredients needed (room temperature):
- 500g of diced pork (with 20-30% fat)
- 50g honey
- 40g sugar
- 20g of char siew sauce
- 17.5g of oyster sauce
- 15g of rice wine
- 2.5g of fish sauce
- ½ tbsp of cooking oil
- 3 tsp of salt
- ½ tsp of sesame oil
- ¼ tsp of white pepper

Dressing:
- 2 tbsp of honey

Directions:

MARINADE THE PORK:
1. Mix all ingredients first in a bowl until well combined.
2. Place the meat in the same mixing bowl and mix until it reaches a paste-like texture.
3. Cover with plastic wrap and refrigerate to let it marinate overnight in the fridge.

SHAPING (Ziplock Bag Method):
1. Preheat the oven at 130°C.
2. Place the marinated meat into the ziplock bag and use a roller to roll the meat until desired thickness and size.
3. Cut the ziplock bag and flip meat onto a piece of parchment paper and set it on a baking tray.

SHAPING (Parchment Paper Method):
1. Preheat the oven at 130°C.
2. Place the marinated meat between two pieces of parchment paper and roll the meat until desired thickness and size.
3.Peel off the parchment paper, set it onto a baking tray and trim the sides

COOKING:
1. Bake the meat for 30 minutes at 130°C.
2. Once 30 minutes have passed, flip the meat over and bake it for another 15 minutes.
3. After 15 minutes, cut the Bak Kwa into desired shape.
4. After cutting the Bak Kwa, bake it again on both sides at 205°C for 5 minutes each.
5. Once done, place the Bak Kwa on a baking tray and let it cool before consuming.

The Bak Kwa is best eaten warm on the same day.
